What is a gastronorm container?
A gastronorm container, also known as a "GN", is a product commonly found in professional kitchens for a variety of uses: food storage, cooking, freezing or transportation. Gastronorm containers are specially designed according to dimensions defined by European standard EN 631, to ensure that all kitchen elements fit together.
The different sizes of gastronorm trays
There are several sizes and dimensions of gastronorm bins available on the market, to meet the varied needs of foodservice professionals. The main dimensions available are as follows:
- GN 1/1: measures 530 mm (length) x 325 mm (width) x 220 mm (height)
- GN 1/2: size 530 mm (length) x 325 mm (width) x 110 mm (height)
Other formats are also available, depending on the type of use required.
Why was EN 631 created?
EN 631 was developed to provide a common basis for all gastronorm products. It provides standardized criteria and dimensions for food processing and exchange in professional kitchens. As a result, all stainless steel containers match and can be exchanged between different suppliers.
This standard is based on the principles of HACCP (Hazard Analysis and Critical Control Points), designed to minimize the risks associated with food contamination. As a result, it enables manufacturers to produce products that connect easily and whose dimensions correspond to the standard sizes that represent the gastronorm format.
It also enables products to be transported more efficiently, thanks to standardized transport scales. In addition, this standard is valid for various appliances such as professional ovens, freezers and dishwashers, all of which must be built to the same standard.
